Microwave Jambalaya Recipe

This is a quick, easy and tasty meal, which is also pretty healthy.  It can be cooked in your microwave oven in a few minutes, and requires very little preparation or washing up.  It’s also pretty inexpensive to cook.

In order cook this microwave based recipe you will need:

  • 400g can of chopped tomatoes
  • One small minced Garlic clove (or garlic powder)
  • 1 x can full of easy-cook rice
  • 1 x red pepper, de-seeded and diced
  • 200g of spicy Chorizo chopped into chunks
  • 2 reasonable handfuls of frozen sweetcorn
  • A large sprinkling of Cajun seasoning / add to taste
  • Salt and Pepper to taste

To serve

  • Chopped parsley (optional)
  • A small spoonful of soured cream

Add the tomatoes into a large pyrex bowl, and fill the empty can with rice, top that up with water and pour it into the bowl with the tomatoes.

Next stir in the pepper, sweetcorn, Chorizo, minced garlic, Cajun spices and salt and pepper.

Add a lid to the bowl (or cover with clingfilm – add a couple of holes in the top if using this method), and then microwave this mixture for 10 minutes at around 700-800w.

Remove the lid, and stir the meal to make sure it’s evenly cooked, and place the uncovered bowl back in the microwave for around 12 minutes, or until the rice tastes cooked.

Remove the bowl from your microwave oven, and then add the chopped parsley shortly before serving.  Serve with sour cream and salt and pepper to taste.
