Easy Microwave Seafood Risotto

This a quick, easy, tasty and cheap microwave recipe for Seafood Risotto


  • 1 medium onion, which has been finely chopped
  • 1 head of fennel, which has been finely sliced
  • 1 tbsp extra virgin olive oil
  • 300g of risotto rice
  • 500ml fish stock or vegetable stock – you can cheat and use stock pots for this.
  • 300g of seafood mix – you can use pretty much any seafood you like
  • 100g of frozen peas
  • 3 tbsp grated Parmesan cheese
  • 1 medium sized lemon, grated zest and juice
  • a handful of chopped parsley leaves

Place the chopped fennel and onion in a pyrex bowl with the oil, and microwave on high for around 5 minutes. Next add the risotto rice, and pour on the stock. Place a lid on the pyrex bowl and place back in your microwave oven on high for around 10-14 minutes, microwave until the rice is very nearly cooked. Add the seafood mixture and peas, stir well, and microwave for another 3 minutes, until the seafood and rice is cooked. Remove the dish from the microwave oven, and make sure the seafood is cooked properly, before stirring in the Parmesan and lemon juice.

Serve the seafood risotto in bowls with the parsley sprinkled on top.
